A prolific US remixing, recording and producing outfit, Washington, DC-based Deep Dish comprises Iranian-born Ali "Dubfire" Shirazinia (b. 1971 Iran), and Sharam Tayebi (b. 1971, Iran). They met in 1991, DJing at the same party. In 1992, they formed Deep Dish Records and set out to expand the boundaries of deep house. They quickly established a distinctive sound, using collaborators such as BT (Brian Transeau) and John Selway. They have continued to DJ all over the world and have remained committed to their purist notions of what good house music should be. They began a subsidiary of Deep Dish Records, Yoshitoshi, in 1994, which has released several respected singles by Hani, Satori, and Alcatraz. They were signed to the major UK dance music label, Deconstruction Records, in December 1995. Their debut singles "Stay Gold" and "Stranded", released in October 1996 and 1997 respectively, were well received.
Their mix of De'Lacy's "Hideaway" was also very successful, and led to further remix work for the Pet Shop Boys, Michael Jackson, Janet Jackson, and the Shamen. Having already released several mix albums, the duo began work on their studio debut, Junk Science, which was released in July 1998. The UK's Mixmag commented: "12 years in and somebody's finally made a house album you'll want to listen to all the way through and play again and again . . . Washington's finest make the first truly great house album." A reworking of "Stay Gold", using the vocal talent of Everything But The Girl's Tracey Thorn, was a UK Top 10 hit in September 1998 and Deep Dish won the UK's Muzik magazine's award for Best International DJ in October that year. The duo subsequently started a hip-hop label, Middle East Recordings, and took up a Friday night residency at "Move" at the Ministry Of Sound in London. In 2002, they won a Grammy Award for Best Remixed Work with their reworking of Dido's "Thank You".
